Ziereisen Jaspis "Unterirdisch" Roter Gutedel 2020

Rust red to orange. Deep, clearly vegetal, also mushroomy, yeasty and slightly wilted floral scent with earthy, slightly tobacco, nutty and restrained yellow fruity aromas. Tight, very tart, cool fruit, lots of yeast, mushroomy, nutty, earthy and chalky tones, very fine acidity, lots of grip from crumbly tannins, floral nuances, white pepper, citrus zest in the background, certain depth, still very young, seems stronger than It is, gains freshness with air, very firm, tart, cool finish with spicy tones, lots of grip and a fine bite.

The “Underground” is made from the rare Roter Gutedel grape variety and is fermented entirely on the skins in the style of an orange wine. Maturation without any intervention for one year in an amphora buried in the vineyard, then pressing and further maturation in barriques.

Mashing with the feet in the vineyard, spontaneous fermentation of the entire berries in an amphora buried in the vineyard, aging for 12 months in the amphora, then pressing and further aging for at least 12 months in barrique barrels, bottling without additional sulfurization, finishing or filtration.
